SUITE WHISKY GRILLED
RIBS
INGREDIENTS:
2 – 2 Lbs.
boneless pork back rib meat – scored
1 tbsp. chili
powder
2-¼ tbsp.
canola oil
1-½ cups water
½ cup tomato
paste
½ cup balsamic
white vinegar
½ cup brown
sugar
1/12 tbsp.
honey
2 tbsp.
Worcestershire sauce
2 tsp. salt
¼ tsp. pepper
1 ¼ tsp. liquid
smoke
3 tsp. whiskey
2 tsp. garlic
powder
1/3 tsp.
paprika
2 tbsp. dark
molasses
NOTE: Preparation time
is done day before cooking
PREPARATION OF WHISKY
SAUCE:
Pour all of the
sauce ingredients into a mixing bowl and stir until smooth, then pour into a
sauce pan on medium heat and bring to a boil. Turn heat down and let simmer
uncovered for 1 ½ hours, stirring occasionally or until sauce has thickened.
Remove from heat and set sauce aside to cool.
PREPARATION OF RIBS:
Place each rib
on a large piece of foil. When sauce has cooled, brush amply over the ribs on
both sides. Do not spare the sauce. You will have plenty to use later on the
grill. Wrap foil around the ribs and refrigerate overnight. When you are ready to cook the ribs, pre-heat
your oven to 250 degrees, and bake for 3 hours.
Remove ribs from oven, uncover the foil, and place on a high heat
outdoor grill for 4 – 5 minutes on each side, basting the ribs with the
remaining sauce. Turn ribs over several times in order to keep sauce from
burning.
