SUITE SUE’S PANCAKES
INGREDIENTS:
¾ cup whole grain flour
¾ cup whole wheat pastry flour
½ tsp. baking powder
½ tsp. baking soda
1 tsp. salt
½ cup buttermilk or Milnot concentrated milk
1 tbs. Honey
2 eggs
2 tbs. Canola oil
¼ cup blueberries or fruit of choice
PREPARATION:
Keep fruit separate of batter. Mix wet and dry ingredients together, but don’t overbeat. It’s okay to see lumps in the batter. Pour batter on hot grill or skillet then add blueberries before batter sets up in pan. Cook until pancake is lightly browned on cooking side then turn over and cook until second side is lightly browned. Check by poking pancake to be sure it is cooked thoroughly.
This recipe makes about 10 - 5” pancakes.
You can freeze leftover cakes for future use.
