SUITE CABBAGE STUFFED PEPPERS

 

INGREDIENTS:

1 ½ Cup chopped cabbage

8 oz. tomato sauce

8 oz. chunk tomatoes

½ cup chopped onion

½ cup bulgur

1 tbs. crushed garlic

1 tbs. crushed red pepper

2 tbs. dried oregano

1 tbs. salt

1 tbs. pepper

2 tbs. balsamic vinegar

8 oz. mozzarella cheese

1 egg or ¼ cup egg beaters

 

PREPARATION:

Preheat oven to 375 degrees. Pan-sear cabbage until soft and add balsamic vinegar. Stir in garlic, crushed red pepper, oregano and put in medium size mixing bowl. Add one pound raw ground lean beef and 4 oz. tomato sauce. Salt and pepper and throw in an egg. Mix thoroughly with spoon (I prefer to use my hands). Take two large red, yellow, or orange bell peppers and cut in half. Divide and stuff each one with stuffing mixture. Top off with remaining tomato sauce, tomatoes, and sprinkle shredded mozzarella cheese. Bake in covered Dutch oven or baking pan covered with foil for 45 minutes. Uncover and bake additional 15 minutes.
