SUITE SMOKY OLD BAY
SALMON
INGREDIENTS:

oz. Alaska Wild Caught Salmon
Old
Bay Seasoning
2
tbsp. Horseradish
1
Lime
Olive
Oil
PREPARATION:
Place
salmon on a piece of foil large enough to enclose salmon when ready. Generously
brush olive oil over salmon. Sprinkle Old Bay Seasoning and spread the
horseradish on salmon. Cut one lime in half, squeezing the juice of half the
lime over the salmon, and slicing the remaining half of lime into small slices
to place on top. Fold the foil over and around the salmon, crimping the foil to
make it as airtight as possible. Please in refrigerator for up to two hours.

Minutes before you are ready to cook the salmon, light a charcoal grill and
make sure all coals are white. Place salmon on grill and cook for 10 minutes.
This is very important. The next step is to lift the grill piece up so you can
place a few chunks of mesquite or hickory flavored wood on the coals. Set the
grill back in place. Once the wood has begun to smoke open the top foil of the
covered salmon and let cook another five minutes. You may have to adjust
cooking times, depending on size of salmon. Lift the salmon off the grill and
place on a large plate and start picking at the flaky fish.
The
smokiness really gets caught up with the Old Bay and horseradish flavors to
make a sensational tasty salmon filet.
