SUITE POTATO AND CHEESE SKILLET


INGREDIENTS:
Canola oil
1 cup frozen has brown potatoes
1/2 cup chopped fresh or frozen onion
1/2 cup chopped fresh or frozen green pepper
1 cup egg substitute
1/2 tspn low-sodium Worcestershire sauce
1/2 tspn Carribean Jerk seasoning
1/4 tspn salt
1/4 cup shredded reduced-fat cheddar cheese


PREPARATION:
Add canola oil in a 10-inch skillet and set to medium heat. Spread potatoes evenly in skillet. Cover and cook five minutes. Remove cover to stir and add onion and gree pper to potatoes. Cover and cook another five minutes. Mix egg substitute with Worcesterhire, hot sauce and salt. Pour over potato mixture and continue cooking until egg is nearly set. Top with cheese, cover skillet, and cook until cheese is melted and egg is set on top.

Makes four delicious servings
