SUITE CREOLE OYSTER
DRESSING
INGREDIENTS:
3 Tbls. Olive
Oil
½ cup Chopped
Onion
½ cup Chopped
Green Bell Pepper
½ cup Chopped
Celery
2 Tbls. Crushed
Garlic
5 cups Dried
Day Old Bread
1-1/2 cups Oysters,
shucked and in their liquor
1 cup Chicken
Broth
¼ cup Chopped
Green Onions
2 Tbls. Chopped
Parsley
1 Tbls. Creole
Seasoning
½ Tsp. Hot
Pepper Sauce
Salt
Fresh Ground
Pepper
PREPARATION:
Preheat oven to
350 degrees F. Generously oil the inside of a baking dish. In a large skillet,
heat the Olive Oil until it begins to smoke. Add onion, bell pepper, and celery
and sauté, stirring frequently, about two minutes or until softened. Add garlic
and cook two minutes longer. Lower heat and fold in bread, oysters and their
liquor, and broth. Stir until moistened and add green onions, parsley Creole
seasoning, hot pepper sauce, and season to taste with salt and pepper. If mixture appears to be too dry, add a
little more Chicken Broth. Pour dressing into baking dish, cover with foil and
bake for 30 minutes. Remove foil and bake additional 20 minutes, top is a
golden brown.
This can make a meal by itself, or compliments
roasted turkey or chicken
