SUITE “SHROOM-O” LUNCH
DELIGHT
INGREDIENTS:

– Baby-Bella Mushrooms sliced in half

– Onions sliced thin
2
– Whole Grain English Muffins
2
– Thin slices of light Cheddar Cheese
1
– tbs. Balsamic Vinegar
Olive
oil
PREPARATION:
Sauté
onions and mushrooms in fry pan with small amount of Olive Oil until soft. Drop
in Balsamic Vinegar, stir and let simmer for one minute. Using two English Muffins
cut both in half and garnish with light mayonnaise, mustard or both. Divide
mushrooms and onions into two servings and place on bottom half of muffin. Add
the cheddar cheese, and second half of the muffin on top. Brown on both sides
in Panini maker or use a foil wrapped brick to press sandwich flat.
SERVE
THIS LOW FAT SANDWICH
WITH
SOUP OR RATATOULE FOR A DELIGHTFUL LUNCH.
