HARVEST POTATOES

 

INGREDIENTS:

3 lb. Sweet Potatoes, yams, winter squash and or/white potatoes

2 Golden Delicious apples

½ cup butter, melted

½ cup grated Parmesan cheese

Salt and pepper

 

PREPARATION:

Soak top and bottom of a small clay baker in water for 15 minutes. Thinly slice sweet potatoes, or other choice vegetable, Pare, core and thinly slice apples. Place a sheet of parchment paper inside the bottom part of baker as a liner. Coat bottom with 1 tbs. butter. Place a layer of potatoes in bottom, drizzle with 1 tbs. butter and 1 tbs. Parmesan cheese. Sprinkle with salt and pepper.  Repeat this same technique alternating between apples and potatoes until all ingredients is used. Press down firmly to compress vegetables. Cover, place in a cold oven and set temperature to 475 degrees. Bake for 45 minutes, uncover, and reduce heat to 425 degrees and bake for an additional 30 minutes. Potatoes should be brown and crisp on top and around the edges. Test for doneness by piercing with a fork. Remove from oven and allow to stand for 5 minutes before serving.
