SUITE FLANK STEAK OVER RICE

 

INGREDIENTS:

8 oz. Lean Flank Steak

3 tbls. Olive Oil

4 tbls. Dale’s Seasoning or your favorite BBQ sauce

Caribbean Jerk seasoning

Salt

Pepper

1 cup Wild Rice Blend

1 ˝ cups Water or low fat Beef Broth

1 tsp butter

2 Small Yellow Summer Squash

˝ Chopped Onion

 

PREPARATION OF FLANK STEAK:

Place 8 oz. of Flank Steak in a marinade dish or bowl.  Spread 1 tbs. of olive oil on each side.  Use several pinches of Caribbean Jerk season, salt and pepper on each side. Pour 2 oz. Dales seasoning or BBQ sauce on each side. Cover and put in refrigerator for two hours to marinate, turning it over once about every 30 or 45 minutes.

 

PREPARATION OF WILD RICE:

Put 1 tbs. of Olive Oil and 1 tsp. of butter in a Dutch oven pan on medium heat. Add onions, squash and rice and sauté for five minute, stirring occasionally. Add beef broth or water and bring to a boil. Reduce heat to simmer, cover and cook 15 minutes. Remove from heat and let stand covered for 10 minutes, and then serve.

 

GRILLED FLANK STEAK:

While rice is covered and standing for 10 minutes, flip the marinated flank steak on the grill and cook to your taste. I like mine rare. My wife likes hers medium. We have compromised and cook it medium-rare.

 

Dish up the rice on two plates, cut flank steak in half and serve over the rice. Enjoy a delicious meal, makes two servings.
