HOLIDAY EGGS BENEDICT

INGREDIENTS:

 

2 slices Canadian bacon

2 Poached eggs

1 English muffin

1 pkg. McCormick Hollandaise Sauce mix

Pinch of Paprika

Sprig of chopped Fresh Parsley

 

PREPARATION:

 

Slice the English muffin in half and toast both halves. Mix the hollandaise sauce according to package directions. Cook Canadian bacon in fry pan until warmed through. Poach two eggs to your taste and consistency. Place slice of Canadian bacon on each toasted muffin half. Add poached egg on top of Canadian bacon. Pour ¼ cup hollandaise sauce over each egg. For color and added flavor, sprinkle a pinch of Paprika on one egg and finely chopped fresh parsley on second egg.
