BAR-B-CUE SAUCE SALMON
INGREDIENTS:

oz. Fresh Wild Caught Alaskan Salmon filet (or size of your choice)
Sweet
Baby Rays Bar-B-Cue sauce or sauce of your choice
Montreal
Steak seasoning
Olive
Oil
Old
Bay seasoning
PREPARATION:
In
a marinate pan or plate, lightly sprinkle Old Bay seasoning over the salmon and
rub into the meat. Pour enough Olive Oil to rub over the old bay, making a
light pasty mixture. Shake Montreal Steak seasoning (this is excellent for
fish, too) over the olive oil and Old Bay paste, then brush Bar-B-Que sauce to
cover the salmon, leaving the skin on the bottom, then cover the marinate pan
or plate and refrigerate for one hour or longer.
Light
your outdoor gas or charcoal grill to medium/high heat. Remove the salmon from
marinate pan and place on grill skin side down for three minutes. Turn over,
and, using a tong and knife, peel off the skin of the salmon (this comes off
easy when grilled) and discard. Scrape off the dark gray layer on the underside
of the salmon until you see the pink meat and discard. Brush Bar-B-Cue sauce on
the underside and turn over. Brush more Bar-B-Cue sauce on marinated side. Cook
for two more minutes.
Serve on a platter lined with fresh steamed broccoli
